BUKO PIE
Filipino style coconut pie mainly filled with creamy fresh & tender young coconut meat.
✔️Dough
1 & 1/2 cup water [360 ml]
1/4 cup sugar
1/4 tsp salt
1/3 cup veg.oil [80 ml] (or 100g butter/shortening)
4 cups all purpose flour [512 grams]
✔️Filling
2 & 1/2 fresh coconut juice (or water ) [600 ml]
1/2 cup milk powder [60 grams]
1 cup cornstarch flour [125 grams]
1/2 cup sugar [100 grams]
1/4 tsp salt
350 grams young coconut meat [2 pcs. coconut fruit]
Baking time: 30-40 mins @ 170C.
Please check your actual pie texture when baking coz time & temp will vary on your oven’s specs.
If you want softer crust, bake for not more than 30 mins. 35-40 mins or more baking time for slight/medium toasted crust.
