Episode 3 – Pie Crust

Hello everybody!!

As far back as I can remember, I have loved being in the kitchen baking.

I grew up along side my mom at the kitchen table, helping to make everything from cookies and cakes to muffins, crepes, pancakes, and waffles to sweet and savory pies to jams and custards and everything in between.
We shared countless hours of laughter, mixing, rolling, taste-testing, and lots and lots of hugs and kisses!

I learned to count and measure and add; I learned basic rules of chemistry; in essence, I learned so many of the building blocks of life in general in our kitchen.

But what I learned most of all is that there is no measurement for I truly gained (and continue to gain) from spending hours upon hours baking with the people that I love.

The endless love and care shared in every moment have helped to shape who I am and what I love!

So, in honour of all of those wonderful memories, we thought we would share one of the baking essentials and true foundations to add to your recipe book- the pie crust!!

(It, also, happens to be one our favorite things to make and eat!)

Pie Crust Recipe
** This recipe makes enough dough for a two-crust pie.

2 cups all-purpose flour
1/2 – 1 tsp salt
(1 1/2 – 2 Tbsp sugar – **optional for sweet pie crusts**)
3/4 cup butter (softened)
5-6 Tbsp cold water

In a medium or large bowl, mix flour and salt together.
With a pastry cutter or two knives (you can, also, use your fingers), cut butter into flour until mixture resembles coarse crumbs.
Sprinkle the cold water, a tablespoon at a time, into the mixture.
Mix lightly together until moist enough that dough will hold together.
(Dough should not be wet, but moist enough to be pliable.)

Shape mixture into 2 balls, one slightly larger than the other.

On a lightly floured board, with floured rolling pin, roll out larger ball of dough into a round shape. It should be about 1/8 inch thick and about 1 1/2 inches larger all around than upside-down 8- to 9-inch pie plate.

Roll dough round gently onto rolling or gently fold it over your hand; transfer to pie plate and unroll. Gently ease dough into bottom and up side of pie plate to line evenly; trim dough edge, and fill as recipe directs.

(** If simply making pie crust on it’s own for a treat, bake at 425 degrees Fahrenheit for 15 minutes or until golden brown. The timing will depend on the oven.)
