Baking With Ayalah: Vegan Sweet Potato Pie Cupcake

Sweet Potato Pie Cupcake

1 ½ Cups – Cake Flour
1 Cups – Sugar or Brown Sugar
¾ tsp – Baking Powder
¼ tsp – Baking Soda
½ tsp -Salt
1 tsp – Cinnamon, Ground
¼ tsp – Cloves
¼ tsp – Ginger
¼ tsp – Nutmeg
¼ tsp – Allspice
½ Cup – Vegan Butter, unsalted. (If it is Salted-omit salt)
½ op – Coconut Milk/Oat Milk
½ tbs – Coconut Oil
½ tbs – Vanilla Extract
6 tbs – Silken Tofu, soft
3/4 cup – Sweet Potato Pie Mix (see recipe below)

1. Combine all the dry ingredients in mixer.
2. Turn on low and slowly add butter until crumbly texture.
3. Blend the tofu, milk, oil, and vanilla in a blender.
4. Add the tofu blend to the cake batter and mix until just combined.
5. Add the sweet potato pie mix to the cake batter, and mix until just combined.
6. Place in prepared cupcake pans and bake at 350 degrees for 16-25 minutes.

Sweet Potato Pie Mix
1 Large Sweet Potato
1 tsp Cinnamon
¼ tsp Ginger
½ tsp Nutmeg
½ tsp Allspice
½ tsp Cloves
½ Cup Sugar
4 tbs Vegan Butter
¼ Cup Coconut Milk or Oat Milk

1. Peel the sweet potato and cut it into smaller pieces.
2. Boil the sweet potato until soft.
3. Add the sweet potato into a mixing bowl and mix using the paddle attachment.
4. Add the butter and sugar to the potatoes while hot.
5. Add the spices (make adjustments as needed. Start off with small additions if necessary to avoid over seasoning)
6. Add the milk.
7. Cool & Set Aside.

Vegan Icing

2 sticks of unsalted vegan butter (or low salt)
4 Cups Powdered Sugar
1 tsp Vanilla
Splash of Coconut or Oat Milk
(Pinch of salt IF vegan butter is unsalted)

1. Add the butter, powdered sugar, and vanilla in a mixing bowl and cream at a slow speed.
2. Slowly add milk as needed. Be careful not to add too much so that it’s not too loose.
3. Chill and set aside until needed.
*Please note: Vegan butter tends to melt as it is oil-based. Careful not to pipe on hot cupcakes, and keep in a cool environment.
