Join me as I make and bake Hot Pocket style hand pies. I am using up leftovers and pantry items to make three delicious fillings: meat and potato, vegetarian, and fruit pie. What kind of filling will you use? Cook with me. Great for breakfast, lunch, dinner on the go, or a snack!
Hand Pie Dough Recipe
Makes 16 Hand Pies
INGREDIENTS
3 cups white flour, plus more for dusting
1 cup + 2 tablespoons whole wheat flour
2 teaspoons salt
1 1/3 cups room temperature butter
3/4 cup water (12 tablespoons)
Milk for brushing
INSTRUCTIONS
Mix dry ingredients.
Add butter in slices or small pieces to flour mixture and knead into a crumbly texture.
Add water incrementally to crumbled mixture, until a Play-doh moisture and texture level is achieved with the dough. Massage into a dough ball.
Refrigerate dough ball for 45 minutes.
Dust cutting board surface or counter.
Take 1/4 of the dough ball and roll out flat. Cut out 4-5 inch diameter rounds using a bowl (cookie cutter style).
Repeat with remaining dough until you have 16 pie rounds.
Fill center of 16 dough rounds with desired filling.
Fold over and close seams of pies with fingers.
Crimp edges with a fork.
Brush stuffed, sealed pies lightly with milk.
Stab the center of each pie with fork tines.
Bake filled pies for 16 to 20 minutes @375 to 400 degrees. Sweet pie fillings can be baked for less time.
Let cool slightly before serving.
NOTES
Do not place raw meat in pies.
Peek in on baked pies to make sure edges are not getting too brown.
For sweet pies, you can experiment with turbinado sugar and glazes on the outer crust.
