Apple Pie | the best vegan recipe
This Vegan Apple Pie is made with a coconut oil pie crust and is so easy to make! Everyone will love this traditional pie! Is there anything better than a nice warm slice of apple pie? Yes, actually, a warm slice of apple pie with a nice scoop of vanilla ice cream on top.
Ingredients:
Crust
* 250g all purpose flour
* 1/2 teaspoon salt
* 1 tablespoons coconut sugar
* 100g coconut oil, cool enough to be solid
* 4 – 6 tablespoons of ice water
Filling
* 4 large apple
* 2 tbsp coconut oil
* 50g honey
* 2 tsp cinnamon
* 1 tbsp lemon juice
* 1 tbsp lemon zest
Method:
1. Pre-heat the oven to 190 degrees C.
2. In the bowl of a food processor, add in the flour, salt, and sugar, coconut oil and process for about 30 seconds or until it is well combined.
3. Add the ice water and process to combine.
4. Wrap the dough in plastic wrap, and place in the fridge for 20 minutes
5. In a large pan, mix together the cubed apples, coconut oil, cinnamon and lemon juice.
6. Stir and sauté 20 min until apple are soft. Add honey, stir until combine and let cool completely.
7. With hands, transfer the crust mixture into a 9-inch tart pan, gently pressing an even layer on the bottom and sides of the pan.
8. Pour the filling into the crust and use a spatula to create an even surface.
9. Cover the top of the crust with foil and bake for 30 minutes. After 30 minutes, remove the foil and then bake for an additional 40-50 minutes or until the pie is a nice golden brown color. Watch the top of the crust for the last 10 minutes and cover it again if the top starts to get too brown.
10. Let cool completely before enjoying (although this is not 100% necessary!).
11. Decorate the top with ice cream.
