Continuing our Asian dessert series!!!

Simple tutorial with Chef Pi Tou showing us how to cook and prepare the various ingredients for Thai pancakes from start to finish.
The recipe calls for two items that you’ll have to get from either an Asian supermarket or from online.
You can get both from the following links.
♦ pandan leaves
♦ Shredded coconut
The following recipe is for 100 pancakes, two pancakes a portion so 50 portions in total, the best thing about these pancakes is that they can be frozen and then steamed or microwaved as and when you need them.
Otherwise adjust the recipe accordingly to produce half or quarter the amount.
Here’s the recipe:
1kg Self raising flour
500g shredded coconut (shredded is best, otherwise use desiccated coconut)
300ml coconut milk
100g pandan leaves, (ใบเตย)
250g Palm sugar
1.5 litres of water
pinch of salt
