Pancake Tray Bake | Fluffy baked pancake

We all love pancakes. These soft, fluffy and delicious pancake in less time and effort is the best ever, when you serve for a crowd. Instead of pouring and flipping one by one, you can pour the batter in to a baking tray, cover with your favourite chocolate chips or berries or jam and bake it straight away!!!Cut in to squares and serve them with a topping of strawberry sauce/whipped cream/fresh berries.

Recipe
Brownie tin 23×12 cm
Dry ingredients
1 Cup (120 gm) all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/4 cup (55 gm)caster sugar

Wet ingredients
1 egg
2 Tbsp melted butter
1/2 tsp vanilla extract
1/4 cup +1/8 cup(90 ml ) milk

2 Tbsp peanut butter
2 Tbsp jam
Powdered sugar to dust
Strawberry sauce/whipped cream for the topping

Home made strawberry sauce
300 gm strawberry
1/4 cup sugar
1 Tbsp lemon juice
Cook the chopped strawberries in a heavy bottom sauce pan on medium flame. Once it become soft, add in sugar .Mix well and continue cooking for about 20 minutes until it become thick. (till you get a sauce consistency).Switch off the flame and add lemon juice. Stir well and let it cool completely. Transfer to a glass jar and refrigerate.

Method
1. Mix all the dry ingredients together in a bowl and keep aside. Whisk together egg, milk, vanilla extract and butter in another bowl. Make a well in the center of dry ingredients and pour in the wet ingredients. Use a whisk to combine well.
2.Transfer the batter into baking tray, greased and lined with parchment paper. Spread evenly.
3.Microwave jam for 20 seconds to loosen it up to swirl around. Repeat the same for two to three times.(you don’t need to make it warm. Stir each time you take it out from the oven)Follow the same for peanut butter. ( Don’t keep both together as they take different time)
4.Place a dollop of jam and peanut butter on the batter, swirl around to get a marbled effect.
5.Preheat oven to 160 degree Celsius and bake for 15 minutes. Once it is done, dust with powdered sugar. Cut in to squares and top with strawberry sauce/whipped cream/fresh berries.

Tips
* We can refrigerate them in an air tight container. Make it warm and garnish with your favorite topping.
*This can be served as breakfast as well as dessert. For dessert, top it with ice cream/chocolate ganache/strawberry sauce etc.
