Today I am using leftover mashed potatoes and cheese to make crispy potato pancakes. This is a great way to stretch a meal and recreate leftovers.

INGREDIENTS
1 cup mashed potatoes
1/3 cup shredded cheese of choice
2 large eggs
salt and pepper to taste
cooking oil for frying

welcome back everybody today I’m goingto be utilizing leftover mashed potatoesand cheese to make a quick easy potatopancake breakfast so pretty much thebeginning of the day starts with alittle home school and then it’s timefor me to make breakfast so I’m going tolet my son finish his home school andI’m gonna get started on these easypotato pancakes the other day I madepotato and cheese flout this so I endedup having maybe a cup leftover of thepotato it’s mashed potatoes and cheesemixture I’m going to add it to theseeggs I’m making some potato pancakeswith the leftovers and some of youwanted to see how I do that it’s allgonna get mixed together but I’m goingto go ahead and beat my eggs two largeeggs and now I’m just going to add mypotato cheese mixture I’m just going tomake these little potato cheese and eggpancakes all good stuff just like thatit’s gonna look like a hot mess butit’ll taste good and you can season witha little salt and pepper garlic powderonion powder but my potatoes werealready seasoned so I might add a littlebit of salt and pepper to this andcracked black pepper okay so I’mcreating my griddle on a medium low heatand I’m gonna go ahead and add a goodamount of oil third cup to a half cupmaybe I don’t know probably a third cupand then I’m gonna let that preheat alittle bit and I’m going to add some ofthese this batter that I made so theseare not going to be those like potatocroquette type of thoth ethos that youwould make this is more an Aggie potatoe cheese situationI think I’m gonna flip them over onceagain so they get really good crust onboth sides okayhere I have a pot of water with aboutmaybe almost three cups of water I’mgoing to make some dead anis or aniseseed tea this is something I grew uphaving my grandmother made pots of thisfor everybody especially when it was fluseason cold weather you know what shedid it year-round and I’m going to makethis for our little potato pancakebreakfast and that may be a tablespoonto a tablespoon and a half of theseseeds so here are my pancakesI just garnished it with a little bit ofdried parsley and this is a savorypancake that is perfect for maybe asnack time or a quick breakfast we havetea and I’m also going to be utilizingsome little oranges to make the perfectbreakfast I hope you give this recipe atry I hope you like itand thanks for watchinggood job thanks hon it’s a good way touse leftovers that’s would you like anorangeyou
