I Tried To Make Dorayaki (Japanese Red Bean Pancake) | Midnight Munchies

Make this and I guarantee your house will smell AMAZING!

Recipe is from Just One Cookbook:

Dorayaki Recipe どら焼き

Ingredients:
4 large eggs
140 g sugar (⅔ cup)
2 Tbsp honey
160 g all-purpose flour (plain flour) (1 ⅓ cup)
1 tsp baking powder
1-2 Tbsp water (I used 1 tbsp
1 tsp neutral-flavored oil (I used canola oil)
520 g red bean paste (anko)*

* I used store-bought red bean paste which was already sweetened, so I found overall that the pancake itself could have had less sugar. They can also be filled with peanut butter or custard!

Instructions:
1. Whisk 4 eggs until foamy. Add 140 g of sugar and whisk vigorously (preferably with a whisk, but a fork + perseverance will do too)
2. Measure your flour 160g precisely with an electronic scale if you have one. Sift flour with baking powder into the egg mixture. Fold until smooth.
3. Cover with plastic wrap & refrigerate for 15-30 minutes
4. After chilling, add 1 tbsp water or as much as needed to get loosened but still thick consistency
5. Heat up non-stick pan. Keep heat on low to medium low.
6. Add neutral oil. Soak up excess oil with paper towel trick (see video!). Add about 4 tbsp of batter per pancake (we are aiming for 8 cm diameter but fun shapes are welcomed)
7. Cover pan with lid and let cook.
8. Flip when you see ample number of bubbles.
9. Keep under damp towel/on a plate while frying up rest of pancakes.
10. Fill pancakes with filling of choice (ie. red bean, peanut butter, custard) as desired. Or you could probably eat it as is!
