Ms. Qin has been making scallion pancakes for over 40 years at the Qin Jia Bing Dian shop in Taipei. It takes years to master rolling the dough onto the pin and then rolling it out like she does here. The dough is oiled, filled with scallions and shaped. It’s then rolled into a circle, allowed to rest and then baked on a griddle. Quite simply, Ms. Qin’s flaky scallion pancakes are the best. For the recipe, go here: https://bit.ly/31F36jY
