Ingredients
2 cups Sweet potatoes
Salt
1/2 cups flour
1 large egg
1 tablespoon sugar
Pepper to taste
1/4 of milk
Method
Boil potatoes with a little salt n pepper until soft. Then marsh (you may also use leftover cooked potatoes for this recipe, all you need do is to re-heat them before marshing
In a bowl, add the egg and milk to the marshed potatoes, stir, then add 1/4 flour to the mixture (keep the remaining 1/4th). Combine well
Refrigerate for about 10mins
Place the remaining flour in a plate
Bring out the potatoes mix, using your hands, form into a patty shape. This should make about 8 piecies
Then dredge both side in the remaining flour. Shake off excess flour and place on a large plate
Heat up a tablespoon of oil in a non stick pan, tilt the pan so that the oil coats the bottom of the pan, then gently transfer 4 of the potato patties into the pan( please, use a flat spatula).
Cook until golden brown on both side(about 3 mins each)
Repeat the process with the remaining 4.
Serve with warm milk
NB… You may also top it with fried eggs
