This delicious, healthy pink pancake stack recipe uses pink pitaya (pink dragonfruit) to gain it’s stunning bright pink colour! SAVE this video to make these.
1.5C spelt flour
1C almond milk
1/2C frozen pitaya (pink dragonfruit)
2 tbsp maple syrup
2 tsp vanilla bean paste
1 tsp baking powder
Pinch of Himalayan salt
Add all ingredients to a food processor (or blender) and blend until smooth.
Pour the mixture in large spoonful batches onto a buttered frying pan over medium-high heat. Cook until bubbles appear all over the surface, then flip and cook for a further 3-5 minutes (or until lightly browned).
Enjoy with your choice of toppings!
