How to Make Morrocan Spongy Pancakes | Baghrir (بغرير)

Ingredients
2 cups of coarse semolina flour
1 cup of unbleached white flour
3 1/2 cups warm water
1/2 Tbsp dry yeast
1 tsp baking powder
1/2 tsp salt

To have successful pancakes never use any type of corn flour.

How to cook the pancakes depends on what kind of stove you have. The best way is to use medium high heat as soon as you scoop the batter on the pan and once you see the bubbles lower the heat to low
Make sure to use a piece of cloth on top of plate to place the pancake because the texture is so delicate, if you do not use any cloth underneath, they might stick
To store the pancakes please wrap them with a plastic wrap and have a plastic between each pancake
