Mochi Pancake Recipe

120g (3/4C) All purpose flour
100g (3/4C) Mochiko sweet rice flour
60g (1/2C) Glutinous rice flour
10g (2tsp) Baking powder
100g (1/2C) Granulated white sugar
4g (1/2tsp) Salt

2 Eggs
360g (1.5C) Milk
40g (2T) Melted unsalted butter
6g (2tsp) Pure vanilla extract

🍑 Macerated Peaches 🍑
120g (1.5C) Peaches
20g Sugar
3g Grated ginger

Whipped Cream
50g (1/4C) Granulated white sugar
220g (1C) Heavy whipping cream
