Japanese Fluffy Pancake
Ingredients
• Egg Yolk x2
• Milk 20g,
• Cake flour 32g,
• Baking Powder 2g,
• Vanilla extract,
• Egg White x4,
• Sugar 32g
Method
Yolk part:
• combine egg yolk, milk, vanilla extract, sifted cake flour, and baking powder mix well
White part:
• Beat the egg white with a hand mixer
• Add sugar (1/3 at a time) to the foam like egg white. Keep beating the egg white until the tip stands (wont drip when turned the bowl upside dow :p)
All together:
• Add a scope of egg white into the egg yolk mixture mix together
• Fold in remaining egg white into the egg yolk mixture
• Preheat the pan and use a kitchen paper to oil the pan slightly. Ensure no oil patches
• Scoop the batter (tips: smaller spoon first) and start cooking
• Cover with dorm shape lid and cook for 3 mins
•Then add a few 1/2 tsp of water (becareful not to let water touches the pancakes) cook for 3 mins again
• flip over pancake gently (roll on its side) cover the lid and cook for 3 more minutes
• Enjoy with whipped cream, maple syrup or fresh fruits
