How to Make High Protein Vegan Blueberry Pancakes

In today’s video, I show you how to make high protein vegan blueberry pancakes. These pancakes are incredibly tasty, simple, and a great dish to add to your vegan meal prep. I hope this video inspires you to get active in the kitchen and come up with your twist to make even better pancakes.

What You’ll Need
1 scoop Vivo Life Performance Protein Powder (Acai & Blueberry)
1/2 cup unsweetened soy or almond
blueberries as many as you want
maple syrup to one’s liking
1 tbsp ground flax seed
½ tsp of baking soda
1 cup rolled oats
1 tsp cinnamon
1 banana
1 lemon
2 dates

How to make high protein vegan blueberry pancakes
1) Pour 1 cup of rolled oats into a blender and blend until the oats become a fine powder. The process should only take a few seconds on high speed.
2) Add two dates, a banana, 1 tbsp ground flaxseed, ½ tsp baking soda, ½ cup unsweetened soy milk, 1 tsp cinnamon, and one scoop of protein powder to the blender.
3) Once the previous ingredients have been mixed, cut a lemon in half and squeeze the juice over the pancake batter and blend. The lemon juice is used to help activate the baking soda, which will help make the pancakes rise and become fluffy.
4) Preheat a non-stick frying pan to medium heat.
5) Add pancake batter to the frying pan and cook each side for about 4-5 minutes.
6) That’s it. Your vegan blueberry pancakes are done! Just serve and drench your pancakes in maple syrup. 😊
