2 eggs (beaten)
1 1/2 cups water
1 bunch scallions (green and white parts; halved lengthwise and cut into 2 inch lengths)
oil (for cooking)
Optional: add shrimp

For sauce:
2 tbs soy sauce
1 tsp vinegar
1 tsp red pepper flakes
1 tsp minced garlic
Optional: 1 tsp sesame seed & 1 tsp sesame seed oil
Optional: 1 tbs sugar
