How to Make Chinese Scallion Pancakesㅣ 4K Recipe

Servings: ~4 large pancakes
Difficulty: Intermediate

Ingredients:

Pancakes
– 2 Cups AP Flour
– 1 Tbsp Sugar
– 1 Tbsp Salt
– 1 Tbsp Oil (Plus more for cooking)
– 1/2 Cup Boiling Water
– ~4 Cups Chopped Scallions/Green Onions

Sauce
– 2 Tbsp of Soy sauce
– Pinch of Sugar
– 1 Tbsp Water
– 1 Minced Garlic Clove
– 1 Diced Scallion
-Pinch of Red Pepper Flakes

Directions:
1.In a large bowl mix together your flour, salt, sugar, and oil. Mix to combine. Then stir in your boiling water. Then gently knead your dough until everything comes together in a ball of dough and isn’t sticky. If its too sticky add in 1 tbsp of flour or if its too dry add 1 tbsp of hot water.

2. Cover dough and let rest for 1 hour. Once finished resting cut into four pieces.

3. Roll out each piece into a rectangle as thin as you can get it. (If you have one a pasta roller is great for this) Then cover it with as many scallions as you can. Then starting from one end roll the dough and pressing down after each roll.

4. Now you should have a rope of dough. Now, curl in both of the sides toward the middle until they are touching. Then stack the two rolls and press down with your hand until you have one flat circle. Continue with remaining 3 pieces. Then, cover and let rest for 30 mins.

5. Next, start rolling out your pancakes. Roll one side and then rotate 90 degrees and roll again. Continue this until you have a thin circular pancake. If they aren’t perfect circles its fine, they will still taste great!

6. Once you’ve rolled out all your pancakes, add about ~2tbsp of oil to a fry pan. Then before you turn on the heat put in your pancake (this keeps the scallions from burning). Turn on the heat to medium and gently cook for about ~2 mins on the first side flip, then another 2 mins. After this keep flipping it ever few mins until it is brown and crispy.

7. (SAUCE) Combine everything in a bowl and mix!
