How to Make Amazing Pancake Mix & Pancakes

6 cups all purpose flour
1/3 cup sugar
1 1/2 teaspoons salt
3 Tablespoons baking powder
2 teaspoons baking soda

Mix together as shown in video. Store in an airtight container.

To make pancakes or waffles:

NOTE* The recipe below will make about 6 medium pancakes, so obviously if you have a larger family you will need to double or triple the recipe below.

1 cup of the pancake mix
1 1/4 cup of buttermilk (you can you sweet milk so if you are use about 1 cup)
2 1/2 teaspoons vanilla extract
1 egg
1 1/2 Tablespoons melted butter

Mix until just combined, a few little lumps are fine (Though my pancakes came out great, I normally do NOT mix them near as long as I did in the video, I was talking LOL)

Your pan should be heated to just slightly above a medium heat (about 365-370 degrees). I failed to show in the video, but in between every few pancakes as I wipe out the skillet of any crumbs, I always lightly drizzle a small amount of cooking oil in the pan. You can also use clarified butter for this. You don’t want the pancakes to stick to skillet. Ladle batter into pan according to the size of pancakes you want. If you are not sure if your skillet is too hot put a few drops of the batter in the pan, if they brown too fast your pancakes will burn. If you are new to making pancakes, it will take practice. You WILL get to know the right skillet and right temp to use. Just get in the kitchen and make them!

Optional ingredients to add to the batter:
chocolate chips
pumpkin puree
instant oatmeal & raisins
cinnamon & brown sugar swirled into batter
chocolate syrup swirled into batter
bananas and walnuts

Serve with syrup of your choice! Enjoy!
