We try to make pancakes every Saturday as a tradition, but early this year we realized the ones we were making weren’t the healthiest so we have been hooked on a healthy version ever since! We use a simple 3-ingredient recipe:
2 small ripened bananas
2 eggs
1 cup of oats
I also like to add a scoop of chia seeds, a tablespoon of cocoa powder and a dash of cinnamon.
Step 1. Put bananas, eggs and oats in the blender (along with any other ingredients you’d like to add – chia seeds, cocoa powder and cinnamon)
Step 2. Blend on low until mixed
Step 3. Grease and heat skillet on low
Step 4. Pour batter onto skillet
Step 5. Cook through on one side before flipping
Top with syrup, fruit or your favorite pancake topping!
