To make pan cake fluffy is very difficult,but in this video I make it fluffy without any difficulty. I explain all the tips to make pan cake fluffy. After watching this video you will make pan cake fluffy very easily.
This recipe dont required any oven. basically it is a no oven recipe.

Egg yolks – 2
Egg White – 3
Milk – 15 ml
Oil – 10 ml
Vanilla – 2 ml
All-purpose Flour – 30 g
Sugar Powder – 50 g

Take 3 eggs divide white and yolk, now take 2 egg yolks and mix with whisk, add 1 tbsp that is 15 ml of milk and mix, whin milk mixed well add 1 tbsp of oil that is 10 ml and mix. When oil mixed well add 2 ml of vanilla mix well and keep a side.
Take 3three egg whites and start to beat with mixer, take 50grams of powdered sugar divide into 3 parts add one after another and continue to beat.
Consistency should be like this as I showing, should have standing peaks.
Now keep this a side and take yolk mixture and add 30 grams of all purpose flour sift and mix.
When flour mixed well take small quantity of beaten egg white and add to yolk mixture and mix with the whisk.
Now remove the whisk and add the rest of the egg white and mix gently in cut and fold method.
Work as fast as possible, if not egg will sit and our pan cakes will not be fluffy.
Now heat up the pan apply some butter, add 2 scopes of batter, 1 tsp of water around and close the lid. Cook for 2 minutes.
After 2 minutes add 2more scopes of batter, 1-2 tsp of water around and cook 2 more minutes.
After 2 minutes very gently rotate to other side add 1 tsp of water and cook for 3 to 4 minutes. If required add 1 tsp of water in between.
After 4 minutes our fluffy pan cake is ready.
If the lid is not proper size water vapour will escape and pan cake will not be fluffy. And the pan should be nonstick as well.
