crispy roast duck,how to make peking duck(including duck pancakes and duck sauce )at home easily

Chinese version:

Ingredients:
1.Crispy roast duck:
A whole duck 2000-2500g
Sweet water:sugar 、honey or maltose 30g with 200g water

2.duck sauce:
Water 200g
Brown sugar 30g
Light soy sauce 30g
Dark soy sauce 30g
Flour 30g(wheat flour or corn flour)

3.duck pancakes:
All purpose flour 250g
Water 270g
Vegetable oil 20g(optional)
Salt a pintch (optional)

1.Wash the duck skin by boiling-water for at least 3 times;
Rest the duck for a whole night or more than 8 hours until the duck skin becomes tight;
Brush the duck skin with sweet water;
Remove the extra fat ,wrap the legs and wings ;
Put the duck into the preheated oven and grilled for 40-60mins at 180 Celcius.
Put a tray under the duck to collect the duck oil.

2.simmer the water and add brown sugar and soy sauce,add flour ,stir and simmer until it becomes thick.
You can add water and oil if you like .

3.The ratio of water and flour is around 1:1 ,it would be easier if we add more water ,but , too much water will make pancakes not so chewy.
Another point is keep a stable mid heat when you make pancakes. If it is too hot ,the batter will not flow with the stick.

4.Duck oil is very healthy ,and next time we will make cuisine and deserts by it.

.The duck is very fresh ,so I have not seasoned it, which makes the process very easy.Feel free if you like to stuff fruits or other spices inside of the duck.

配料:
1.脆皮烤鸭:
全鸭 2000-2500克
蜜糖水:麦芽糖一大勺约30-40克,温水200克

2.甜面酱:
200克水
红糖30克
生抽30克
老抽30克
面粉15-30克

3.鸭饼
面粉250克
水270克
油20克
盐一小撮

过程:
鸭子表皮淋至少三壶开水,静至一晚;
用蜜糖水刷鸭皮表面;
去除多余脂肪,锡纸包裹鸭腿骨和翅膀;
准备烤盘,放在鸭子下层,接鸭油;
预热烤箱180度,烤制40-6分钟;

200克水烧开,放置喜欢的香料(可略);
滤去香料,放上红糖、生抽老抽(可换成10克盐),和匀后开小火加入面粉搅拌,待浓稠离火冷却待用;

鸭饼的材料混合均匀,中火摊饼,每次摊完一张后用清水清洁煎饼棍;

准备烤鸭的配菜;

片鸭皮和鸭肉,蘸酱和配菜卷饼一起享用。

说明:
风干鸭子的表皮是脆皮产生的关键,所以选择鸭子时需要尽可能选择新鲜的鸭肉,避免风干时产生异味。另外今天我选择的鸭子比较新鲜,所以这只鸭子的烤制比较“原味”,没有腌制,另外在烤制的时候也没有塞水果香料桃木等,步骤比较简单,大家可以依据个人口味和鸭子的具体情况来进行调整;
甜面酱的面也可以用玉米面等无筋粉类,在食用的时候可以根据个人口味适当加水加油;
春饼的做法一般是揉面-擀制-蒸的方法,用摊煎饼的方式代替时需要注意保持面的筋道,面粉和水体积比要保证在1:1左右,否则面糊过稀就成了普通的软面饼。
鸭皮蘸糖吃,主要是利用鸭肉的热度瞬间融化白糖产生的奇异口感,所以要保证鸭子的温度。
