Ingredients:
Pancakes
2 cups flour
1/2 tsp salt
2 tsp baking powder
1 tsp bicarbonate of soda
2 Tbsp sugar
2 eggs
2 cups sour milk (madila) OR full cream milk with 2 tsp lemon juice
– Mix together the dry ingredients in a large bowl.
– Mix in the buttermilk, eggs and vanilla extract just until combined. Some small lumps are okay.
– Let pancake batter rest for 10 minutes.
– Heat a large pan over medium-high heat. Spray with non-stick cooking spray OR oil.
– Pour 1/2 cup batter onto the pan for each pancake.
– Flip the pancakes over when small bubbles appear on the surface and continue cooking on the opposite side until golden brown.
– Serve with blueberry sauce.
Blueberry Sauce
1 cup blueberries (fresh or frozen)
1/4 cup sugar
1/3 cup water
1 Tbsp cornstarch
1 Tbsp lemon juice
– Stir together sugar, water, cornstarch & lemon juice in a saucepan until well combined then add blueberries.
– Place saucepan on medium heat. Allow the mixture to simmer, stirring occasionally, until it thickens. If sauce is too thick, add a bit of water until desired consistency is reached. Serve over pancakes.
