Hi Friends!! Today I’ll be sharing an oldie, but goodie recipe that was first released in 2017 on TheFancyNavajo.com. Now that it is fall, I crave everything and anything pumpkin. These Fancy Blue Corn Pumpkin Pancakes are so yummy and delicious. It of course incorporates one of my favorite indigenous ingredients, BLUE CORN. I like adding additional nutrients to my daily foods, so I’ll also be showing you how to make your own oat flour. The full recipe can be found here. https://thefancynavajo.com/2017/10/17/fancy-navajo-blue-corn-pumpkin-pancakes/
This video was in collaboration with the Intertribal Agriculture Council’s American Indian Foods Program. The full demonstration was shown at the Southwest IAC Virtual Summit on September 23rd, 2020. If you are looking to find more American Indian made foods then make sure to check out their website https://www.indianagfoods.org/. In this video I used indigenous owned, Blue & Arrow Blue Cornmeal and Dynamite Hills Farms Maple syrup.
