Buckwheat Pancake with Caramelized Bananas/How to Make Pancakes From Scratch Using Buckwheat Flour

I love to have pancakes in the morning on the weekend or just on any day of the week. This is a great recipe for making pancakes using buckwheat flour. Having them made from scratch is by far better, especially when finished with warm syrup with melted butter and topped with caramelized bananas. You’ll never make pancakes using premixed stuff again. Buckwheat pancakes are incredibly good and are a healthier option. The texture and flavor is far different from using an AP flour. This recipe will work for other flours as well, if you choose. I got this recipe from my dad a long time ago and still make it using this recipe to this day.

Ingredients for the pancakes:

1-1/4 c flour
3 t baking powder
1 T granulated sugar
1 whole egg
1 c milk (almond or dairy will work)
2 T melted butter, unsalted (plus additional for cooking pancakes)
1 t vanilla extract or 1/4 t almond extract
Pinch ground cinnamon

For the bananas:

2 whole bananas
1/4 c light brown sugar
pinch nutmeg
1 T butter, unsalted
