Banana Pancakes Recipe
MAKES
10 small pancakes; recipe is easily doubled
PREP TIME:
5 minutes to 10 minutes
COOKING TIME:
2 to 3 minutes
INGREDIENTS
* 2 ripe bananas
* 2 large eggs, lightly beaten
* 125 ml whole milk
* 250 g All purpose flour
* Butter or oil, for cooking (optional)
* Maple syrup / Honey / Jam / with any other toppings during serving
* 1/8 Tbsp baking powder (for fluffier pancakes)
* 1/2 Tbsp salt
* 1/2 Tbsp Vanilla extract / Cinnamon powder
* 1 Tbsp Honey / Sugar
* 1/2 cup chopped nuts, chocolate chips (optional)
* 1 cup fresh fruits (like blueberries / strawberries / raspberries / chopped apples)
Equipment
* Small bowls
* Dinner fork
* Cast iron or nonstick griddle or skillet
* Very thin, wide spatula, like a pancake spatula or fish spatula
INSTRUCTIONS
1. Mash the banana
2. Stir the eggs
3. Add all purpose floor and baking soda
4. Add flavourings if desired
5. Heat a pan over medium heat, Add butter/oil
6. Drop the batter on hot griddle
7. Cook for about 1 minute
8. Flip the pancake
9. Cook for another minute or so
10. Sprinkle with toppings
RECIPE NOTES
Leftover Pancakes: These banana pancakes can be kept in the refrigerator for a few days and warmed in the microwave for 30 second. They’re not as delicious as when they’re fresh, but they make a nice snack.
