INGREDIENTS
2 ripe bananas;
1 egg;
3 tbsp sugar;
1 cup (125 g) flour;
½ cup (120 ml) milk;
1 tsp baking powder;
3 tbsp vegetable oil.
METHOD
Roll bananas with a rolling pin, peel off the skin and mash them with a fork to make a puree.
Whisk banana puree with egg, sugar, flour, milk, baking powder and oil until smooth.
Cover and let sit in the fridge for 30 minutes.
Cook each pancake for 3-4 minutes (both sides) and serve with fresh fruit, berries, honey, or maple syrup.
