Home made fluffy and yummy banana pancakes, super easy to do, basic ingredients, perfect breakfast for kids and adults.
2 bananas, 1 large egg, 2 tbsp olive oil or melted butter, 2 tbsp of sugar, 1 cup of fresh milk, 1 cup all-purpose flour, 2 tsp. baking powder, 1 tsp. salt.
Mash 2 large ripe bananas with a fork, put the mixture of mashed bananas in a large bowl and add one large egg. Mix bananas with the egg very well, and add 2 tbsp. of olive oil and 2 tbsp. of sugar in the mixture. Mix well. Add 1 cup of milk and mix well. Set aside.
In the other bowl add 1 cup of all-purpose flour, 2 tsp. of baking powder and 1 tsp. salt. Mix well. Combine dry and wet ingredients together and mix well. Rest the mixture for 15 min.
Lightly grease the pan with olive oil or melted butter and then turn on the heat. Pour a scoop of pancake mixture onto the heated pan. You can use any measuring cup you have and feel comfortable with.
Cook until golden brown on both sides. The top will bubble up, and after around 5-7 min., depending on your stove, flip to cook the other side. Let the other side turn golden brown.
Top with your favourite syrup and berries or fruits! We used pure Canadian maple syrup and blueberries.
