Recipe
Preheat your oven to 350.
Mash 1 over ripe banana in a liquid measuring cup. Add milk to bring the combined total to 1 2/3 cups.
Transfer to a mixing bowl and whisk in 2 eggs, 4 Tablespoons vegetable oil, and 1 teaspoon vanilla extract.
Add 3 Tablespoons sugar, 1 1/2 cups of flour, and 1 Tablespoon baking powder. Whisk until there are no lumps left.
Fold in 1 cup of blueberries if desired (frozen is fine but they may bleed a little).
Pour batter into a buttered 9×13 pan; use a glass baking dish if possible so that your pancake doesn’t get too dark.
Bake in middle position of oven for 20-25 minutes or until a pick in the center comes out clean.
Cut into 12 pieces and serve with maple syrup.
