Wheat Dark Chocolate Chip Cookies // MUST TRY! // How To Make Healthier Cookies // Baking Cookies

These turned out SO delicious that even my daughter loves them! (she doesn’t like chocolate). They are so worth trying! I LOVE baking and once I figured out the basics of baking cookies, I experimented and made my own version of a healthy-ish cookie! I did not have any Monkfruit or Xylitol sugar left and I must say they are quite pricey haha. So I used Cane Sugar instead today because that’s what I had left. If you end up making these yourself, I would love to know what you think! 🙂

*PS. Something I learned in Nutrition class when I was in college is, when looking at the ingredient label of your product/food… The very FIRST ingredient is what the product is mostly made out of. So, if you buy “dark chocolate” BUT the first ingredient is “sugar” then it’s mostly made out of sugar. So the list goes from whats mostly in it, to whats least in it. When buying whole wheat flour please make sure the first ingredient says 100% organic whole wheat flour (or so) not bleached or enriched wheat flour. 🙂 just a tip!

For these I don’t recommend using a stand mixer as it can be easily over mixed !

INGREDIENTS:
-2 Cups Organic Whole Wheat Flour
-1 Cup Light Brown Sugar (this makes the cookies soft and chewy)
-1/2 Cup Xylitol Sugar (or your choice of sugar)
-1 TBSP Peanut Butter (optional)
-1 TSP Cinnamon
-1 TSP Espresso Powder (optional) this brings out the chocolate flavor even more!
-1 Cup Chopped Dark Chocolate Bar or Chips 60% or higher!
-Pinch of Sea Salt
-3/4 Cup Avocado Oil (or coconut oil)
-1/2 TSP Baking Soda
-2 Large Organic Eggs
