Serves 4 to 6 people
INGREDIENTS:
2 egg whites
1/2 cup confectioners’ sugar (powdered / icing sugar) – (50g)
1/4 cup unbleached all-purpose flour – (30g)
2 Tbs. salted butter – melted – (30g)
1/2 cup sliced almonds – (60g)
2 Tbs. butter for greasing mold – (20g)
INSTRUCTIONS:
– Preheat oven to 410°F.
– Crack one egg at a time on a flat surface to break open the shell.
– Gently transfer the yolk back and forth from one half of the egg shell to the other half allowing the egg whites to drop into the bowl. Repeat for the second egg.
– Whisk the egg whites with the confectioners’ sugar. Then add the flour.
– Add and mix the melted butter with a wooden spatula.
– Grease pan with butter and sprinkle slightly with some flour.
– Spoon 2 teaspoons of the batter onto the pan and with a knife, spread it evenly into a 3-inch circle.
– Sprinkle them with sliced almonds.
– Bake for 8 minutes until lightly browned around the edges.
– Remove from the oven and immediately shape the tuiles, lifting up each one with a metal spatula and draping it over the rolling pin so it curves, until set. Be quick or they will dry out and you won’t be able to shape them!
Tip: you can store the tuiles in a cool dry place in a container for up to 1 week.
