This is how to make sugar cookies –

Makes about 36

FOR THE COOKIES –
1 cup (227 grams) softened, unsalted butter
1 cup (200 grams) white granulated sugar
2 large eggs — room temperature
1 teaspoon (5 ml) vanilla extract
1/2 teaspoon (2.5 ml) of almond extract
3 cups (384 grams) all-purpose white flour plus more for kneading and cutting
3 teaspoons (14 grams) baking powder
1 teaspoon (5 grams) salt
1/2 cup (50 grams) powdered (confectioners, icing) sugar
2 tablespoons (30 ml) milk

FOR THE FROSTING –
1 cup (227 grams) softened, unsalted butter
5 cups (500 grams) powdered sugar (confectioners, icing)
2 tablespoons (30 ml) milk
3 teaspoons (15 ml) vanilla extract
Food coloring — optional and your favorite color

STEP ONE –
Preheat oven to 325F (162 C).

Lightly grease or line two cookie sheets with parchment paper or silicon mats.

STEP TWO –
Cream the softened butter with the white granulated sugar sugar, using a mixer or a whisk. Add the eggs, and the vanilla and almond extracts. Mix in.

STEP THREE –
Place the flour, baking powder, salt, and powdered sugar in a bowl. Whisk for a few minutes until all incorporated.

Divide the dry ingredients in two bowls.

STEP FOUR –
Whisk in the two tablespoons of milk into one of the bowls and set aside.

STEP FIVE –
Add the dry half of the flour to the creamed butter and mix in, until all the dry ingredients are incorporated. Do not over mix.

Add the remaining flour with the milk and mix in until all incorporated. Do not over mix.

STEP SIX –
Generously flour a clean counter or board. Transfer the sticky dough onto the counter and knead in with the flour until it is no longer sticky.

Roll out the dough to about 1/8th inch (0.3 cms) thickness. Cut into shapes and place in the baking sheets.

Bake until the edges are slightly browned (do not over do it) and remove from oven — about 15 minutes.

Allow the cookies to cool on the pans for about 3 minutes.

Transfer the cookies to a cooling rack and cook down completely.

STEP SEVEN –
Cream the butter for the frosting with a mixer or a whisk.

Start adding the powdered sugar, 1 cup at a time, and creaming it in.

When you have added all of the sugar, add the milk and vanilla. Mix in well.

Add food coloring, if using, and mix in.

Frost your cookies. You can add toppings like sprinkles if you would like. Store your cookies in an air proof container.
