Eggless Peanut Butter Cookies

Ingredients
1/2 cup or 120 gms unsalted butter
1/2 cup caster sugar
plus a little extra to roll the dough balls in
1/2 cup brown sugar
3/4 cup creamy peanut butter
1/4 cup applesauce (store-bought or refer to the recipe below to make your own)
1 teaspoon vanilla essence
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda

Method

Preheat oven to 180° C and line a baking tray with parchment paper or a silicon mat.
In a large mixing bowl, cream butter, caster sugar, brown sugar and peanut butter. Add applesauce and vanilla essence and cream till nice and smooth.

In another bowl combine flour, salt, baking powder, and baking soda. In batches of 3 add the dry mix to the wet ingredients bowl and continue to mix until combined.

Roll the dough into 1-inch balls or use a small ice cream scoop. This way each cookie will be the same size.
•Coat the dough balls in the extra sugar on all sides and place on the baking tray.
Press gently, using a fork, both ways as shown in the video.
Bake for 10-12 minutes. Each oven is different so keep a check until the edges turn firm and slightly golden brown.
Let cool for a few minutes, then move to a cooling rack.
•Store in an air tight container once completely cooled.

Note: Peel one whole apple and chop into tiny pieces, transfer
to a saucepan and heat on low fire, add 2 tbsp brown sugar, 1/2 tsp cinnamon powder and 2 tbsp water. Cook on low fire, the mixture will start getting thick. Turn off the gas once all the water has dried up. Cool completely before making a smooth paste.
