Peanut Biscuits/Cookies
These biscuits are very easy to make with just six ingredients. Kids will love it and even adults too. Do try this recipe and enjoy it with your family!
Ingredients:
100gms unsalted butter (around 7 tablespoons)
60gms caster sugar (1/4 cup)
¼ tsp Vanilla essence
90gms plain flour/all-purpose flour/maida (around 1/2 cup + 1 tablespoon)
26gms peanut powder (4 ½ tablespoons)
13gms milk powder (6 teaspoons)
For peanut powder, use toasted skinless whole peanuts, measure it, and powder in a spice grinder. Measure the plain flour and combine it with peanut powder. Sift these ingredients. Add the milk powder and mix all the dry ingredients.
Combine the butter and sugar using a whisk or hand blender until it is light and creamy in texture. Make sure the butter is not too soft nor too firm. Add vanilla essence and mix well. Add the dry ingredients in batches and mix it with the help of a spatula until well combined. Wrap the biscuit dough in a cling film and place in the refrigerator for around 20 to 30 minutes.
Divide the dough into small balls measuring around 10 gms each (around the size of a tablespoon). Place the dough balls on a tray lined with baking or parchment paper. Make a fork mark by pressing lightly on the dough.
Preheat the oven at 180° Celsius (350° Fahrenheit) for 10 minutes. Bake the biscuit dough at 180° Celsius (350° Fahrenheit) for 15-20 minutes. Fan mode on, top and bottom heat on. Keep checking in between. Rotate the tray front to back halfway through the baking. After baking let the biscuits cool completely for 10-15 minutes. Store the biscuits in an airtight container.
Notes:
1. The measurement of the ingredients is essential for the best results
2. The butter should be at room temperature that means not too cold or not too soft.
3. While baking, keep checking in between since every oven is different and the baking time varies.
4. Make sure to cool the biscuits outside the oven after baking so that it becomes crispy.
