A few weeks ago I make this easy no bake cookie butter cheesecake. I wanted to share the recipe and show how easy it is to create something super delicious, but very simple, hope you guys enjoy the video!
For the recipe:
No bake cookie butter cheesecake
Ingredients:
cream cheese
butter
1 jar cookie butter (I used Biscoff)
2 boxes of biscoff cookies (1 for crust and 1 for toppings)
brown sugar
crust:
1 box of cookies (I used Biscoff because they are my favorite)
8 Tbsp of softened butter.
in a food proccessor add the biscoff cookies, blend until it is fine, then add in the butter. Once the butter is in, blend both ingredients until it is all combined.
Then spray non stick cooking spray into a pie tin,
Set mixture in the pie tin and cover the bottom of the tin until it looks like a crust.
Set in the fridge for 30-40 minutes.
filling:
2 Cups cream cheese
1/2 Cup brown sugar
2 Cups biscoff cookie butter spread
in a bowl add in cream cheese, and brown sugar, blend with a hand mixer or any mixer you’d like until they are both well combined. Then add in the biscoff spread (or your choice of cookie butter) and blend that in as well.
once it is all combined add the filling into the pie tin.
Take an offset spatula or any flat utensil to spread the filling evenly around the tin.
toppings;
biscoff cookies
crush extra cookies to add to the top.
stick in the fridge for up to 4 hours or overnight and enjoy!
tips:
Spray pie tin before adding the crust.
I bought 2 boxes of biscoff cookies and used almost an entire jar of cookie butter.
