Nastar || Pineapple Cookies

Nastar is one of Indonesian’s sweets that are very popular. It is filled with fresh homemade pineapple jam. The taste is so amazing. Once you bite, nastar will melt inside your mouth and continue with the taste of the jam. The combination of sweet, sour, and butter make nastar turn to be a special cookies in Indonesia. Mostly it will be served during the holidays.
For the pastry dough:

Ingredients:
200 gr butter
100 gr margarin
80 gr powdered sugar
3 egg yolk
Pinch of Salt garam
300 gr all purpose flour

Pineapple Filling:

Ingredients:
2 pineapples
2-3 Cinnamon sticks
6-8 Cloves
Sugar

Egg Wash:

Ingredients:
2-3 Egg yolk
2 Tsb milk
2 Tsb oil

How to make:

Pineapple Filling:
• Cut and wash pineapples. Blend in the food processor to make purée. Use a wok or saucepan to cook the pineapple purée. When it start to boil, reduce the heat. Once at the time, stir so it won’t burn at the bottom. No need to cover with lid because we need to reduce the juice.
• Add cinnamon sticks, clove, and sugar. Simmer until the purée turns to be darker and thicker
• It takes hours to make this pineapple jam.
• You have an option to use regular pineapple jam jar unfortunately the taste won’t be exactly like the homemade filling one.
• Taste it. If it’s enough sweet, turn off the stove. Let it cool.

The pastry dough:
• Beat all ingredients except the flour until the ingredients combine. Then slowly pour the flour into the butter mixture.
• When the dough is already well combined and compact, let it rest for 20-25 minutes.

The shaping:
• Get a small portion of dough, shape a ball, make a hole with your finger and fill with a little bit of jam.
• Cover the hole with your fingers, then shape like a leaf.
• Use the leaf pincher to start the shaping. If you didn’t have it, you can make a ball or use fork to shape.
• Put them on the baking tray with baking paper
• Finish the rest of the dough
• Preheat the oven 300 F
• Brush with egg wash
• Bake for 30-40
• Other option, brush the egg wash after nastar is baked. Put them inside the oven for 10 minutes when the oven is switch off.
• Remove from oven, let it cool
• Serve, enjoy nastar, youl will love it.
