About Christy Carlson Romano:
Christy has been a working actress and singer since she was 6 years old. She moved to Los Angeles with her mother when she was 14 to star in the Disney Channel franchise, Even Stevens as Ren Stevens alongside Shia LaBeouf. Christy enjoyed many years with Disney gaining an Emmy nomination for her voice work as Kim Possible and starring on Broadway in Beauty and the Beast. She went on to balance her college career at Barnard College, Columbia University with filming movies for ABC Family including: ‘Campus Confidential’, ‘Taking Five’, ‘The Cutting Edge 2: Going for the Gold’, and ‘The Cutting Edge 3: Chasing the Dream’. Christy returned to Broadway in her mid twenties and learned to puppeteer in the Tony-Award winning ‘Avenue Q’. Christy was married to her husband on New Years Eve , 2013 in Banff, Canada after having met in a screenwriting class in college. She became impassioned with directing and made her debut in Lionsgate’s “Christmas All Over Again”. While she still works as an actress, she enjoys living in Orange County with her husband, Brendan Rooney, and daughters, Isabella and Sophia.

English Muffin Pizzas
Ingredients
2 English muffins, split
1/2 cup canned pizza sauce
2 cups shredded mozzarella cheese
8 slices pepperoni sausage

Directions
1.Preheat the oven to 375 degrees F (190 degrees C).
2.Place the English muffin halves cut side up onto a baking sheet. Spoon some of the pizza sauce onto each one. Top with mozzarella cheese and pepperoni slices.
3.Bake for 10 minutes in the preheated oven, or until the cheese is melted and browned on the edges.

Berry Banana Smoothie

Ingredients
2 heaping cups organic frozen mixed berries
2 small ripe bananas
2-3 Tbsp light coconut or almond milk (plus more as needed)
Any nut butter, if desired

Instructions
1.Add frozen berries and banana to a blender and blend on low until small bits remain.
Add a bit of coconut or almond milk and blend on low again, scraping down sides as needed, until the mixture reaches a soft serve consistency.
Best when fresh, though leftovers keep in the freezer for 1-2 weeks. Let thaw before enjoying.

No-Bake Peanut Butter Cookies

INGREDIENTS
1/2 cup (115 grams) unsalted butter cut into pieces
1 and 3/4 cups (350 grams) granulated sugar
1/2 cup (120 ml) milk
3/4 cup (190 grams) creamy peanut butter
1 teaspoon pure vanilla extract
3 and 1/4 cups (325 grams) quick-cooking oats

INSTRUCTIONS
1.Before getting started, make sure to gather all of your ingredients and measure everything out. Line a couple of large baking sheets with parchment paper (I like to just line my countertop with a large sheet of parchment paper, if your countertop is heat resistant you can also do this instead) and set aside.
2.Place the butter, sugar, and milk in a saucepan and heat over medium heat, making sure to stir often until the butter is melted and everything is well combined. Bring the mixture to a rolling boil (the top should be completely covered in bubbles and bubbling vigorously) and allow to boil for 60 seconds (make sure to set a timer!) without stirring.
3.Remove from the heat, and stir in the peanut butter and vanilla extract until fully combined. Stir in the oats and mix until all of the oats are coated with the mixture and everything is well combined.
Drop spoonfuls of the mixture onto the prepared baking sheets. Allow to cool for about 45 minutes- 1 hour or until the cookies have firmed up, serve, and enjoy! You can also enjoy this mixture as safe-to-eat cookie dough.
