Recipe:
Filling:
3/4 cup dried figs
1/2 cup walnuts
1/2 cup apricot preserves
2 tablespoons brown sugar
2 teaspoons fresh lemon juice
Dough:
1 cup butter, softened
3/4 cup firmly packed brown sugar
1 large egg yolk (vg option: 1 flax egg)
1 teaspoon vanilla
2 1/4 cups all-purpose flour
1/4 cup granulated sugar
Steps:
Heat oven to 350 degrees
Make filling: cut stems off the figs. Coarsely chop figs in a processor. Add walnuts and pulse until both are finely ground. Place in a bowl and add other filling ingredients.
Make dough: beat butter, brown sugar, egg yolk and vanilla in a bowl at medium speed until light and fluffy. At low speed mix in flour just until blended.
Spread granulated sugar on plate. Shape dough into 1 inch balls and roll in sugar Flatten slightly and indent with thumb. Fill each enter with filling (1/2 teaspoon)
Bake for 10 minutes then cool.
**Do not make cookies too big because they grow
