Lemon Cookies
These soft and cakey lemon cookies have the perfect balance of zing and sweetness and are just addictively delicious!

Cook Time: 15 minutes
Chill Time: 60 minutes

Ingredients:
1.1 tbsp lemon zest of three lemons
2.1/2 cup unsalted butter 100g, room temperature
3.1/2 cup granulated sugar 100g
4.2 cups flour 250g
5.1/4 tsp salt
6.1 tbsp cornstarch
7.1 tsp baking soda
8.1 large egg
9. 3 lemon’s juice
10.yellow food coloring optional

Instructions:
1.Sift the flour, salt, corn starch, and baking soda together then whisk together and set aside.
2.Beat butter and sugars with a whisk until light and fluffy.
3.Mix in the egg, lemon juice.
4.Scrape the bowl down and mix once more. If you’re adding some food coloring this is a good moment to mix it in!
5.Add the dry mixture to the wet and beat until almost combined. Scrape the bowl down one last time then beat until combined.
6.Cover and chill the dough for at least 60 minutes. You can chill it overnight or make the dough months ahead of time and freeze it.
7.Once chilled set oven to 180 C and scoop out potions of cookie dough roughly 1 tablespoons in size.
8.Roll in powdered sugar.
9.Place the dough onto parchment-lined baking sheets leaving about two inches of space between the cookies to allow for spreading.
10.Bake at 180 C for about 15 minutes or until the edges are set, you don’t want these cookies to brown really but the bottom of the edge may just be turning golden.
