Indoor S’mores Cookies
Prep time: 15 minutes + chilling Total time: 45 minutes + chilling Makes: 1 dozen cookies
Ingredients
1 stick unsalted butter, softened and cut up
¼ cup brown sugar
3 tablespoons honey
½ cup all-purpose flour
¾ whole wheat flour
½ teaspoon kosher salt
4-5 regular Hershey bars
Jumbo marshmallows
Graham Crackers: In the bowl of a stand mixer, beat butter, brown sugar,and honey until smooth. Add both flours, salt and cinnamon and beat until just combined. Turn out onto a clean surface and shape into a disk. Wrap in plastic and refrigerate 1 hour and up to 1 day.
Preheat oven to 350 degrees F. Unwrap dough and place another piece of plastic wrap on top. Roll out to a ⅛ inch thickness. Use a knife or pizza wheel to square the edges then use a ruler to cut 2×2-inch squares. Stranger squares to a baking sheet. Prick holes on top to let steam escape. Bake until GBD, 10-12 minutes. Remove and turn oven setting to broil
Place a square of chocolate on top of graham cracker followed by a marshmallow (cut in half of using jumbo) place 6-inches under broiler to toast marshmallow, about 30 seconds. Keep an eye on this the entire time! Remove and let cool.
