How to make Ube Halaya Cookies
3 1/4 cups all purpose flour
1/4 tsp salt
1/2 cup powdered sugar
90-100g ube halaya
2 sticks butter, softened
2 egg yolks
1/2 tsp ube extract
White Chocolate chips (optional)
Using stand mixer or handheld mixer, cream butter, salt and powdered sugar.
Beat in egg yolks until you get a nice buttercream consistency.
Add in ube halaya and incorporate well. Add ube extract and mix well. Slowly add in flour until you get a nice soft dough. Portion out using a cookie scoop for consistency. Slight light flatten the dough to make nice 1/2 inch thick cookie portions.
Bake in preheated oven for 10-13 mins at 350F/177C. Cool on cookie rack and enjoy.
