These vegan apple pie pockets which can also be calles apple pie cookies are so easy to make and very delicious. I like how the dough turns out crunchy and flaky but still soft and super delicious! I totally recommand this recipe.

Vegan Pie

Recipe:

Dough:
1 Cup Orange Juice | 240ml
1 Cup Vegetable Neutral Oil | 240 ml
1 tbsp Baking Powder
1 tsp Vanilla extract or 1 tbsp Vanilla Sugar
0.5 tbsp Sugar | 6 g
1 tsp Salt
6 Cups Flour | 768 g

Apple Filling:
4 Medium Apples Grated or cubed
1 Cup Sugar | 200g
1 Cup Chopped Walnuts | 1 Cup
1,5 tbsp Cinnamon
1 tbsp Vanilla Sugar or 1 tsp vanilla extract

hey guys it’s Hinda and welcome tocooking fantasies in today’s video we’regonna be making these delicious applepie pockets they’re are so delicious andit’s very easy to make we will preparethis dough that’s so flaky crunchy andvery flavorful and we’ll fill it withdelicious caramelized apples besides thefact that it’s really easy to make it’salso vegan so you have no excuse not tomake it if you had for the first time inmy channel don’t forget to hit thesubscribe button and the little bell toget all the notifications because wemake large delicious things here andbefore I start like always you will finddown in the description box all theingredients you’re going to need in bothgrams and cups measurements so let’s getbaking[Music]we’re gonna start by preparing the doughbecause it needs to rest for while soI’m gonna be doing this first and ofcourse you can use a stand mixer or handmixer and I’m just using my handsbecause it’s the same we’ll start byadding the wet ingredients into a bigbowl add the oil and orange juice andgive them a quick whisk together kind ofmix them before starting to add the dryingredients now for the dry ingredientsI’m gonna start by adding just abouttwo-thirds of the flourwith the rest of the dry ingredients thesalt baking powder sugar and everythingand then I’m gonna work the doughtogether this makes it much easier toincorporate everything and I’m gonna begradually adding in the rest of theflour till my dough comes together ifyou are using a stand mixer you’re gonnabe adding the flour gradually whilekneading on a medium speed you don’tneed to use too much power neither withthe hand or the sand machine and when itstops sticking to the hands and to thesides of the bowl it means it’s readyyou’re gonna cover it and allow it torest for at least a half an hour andmeanwhile we’re gonna be preparing thefilling so the apple filling I’m gonnabe adding some walnuts but this isoptional you can add any nuts that youprefer I use a simple hand grater or acheese grater to grate the apples if youprefer to you can cut them into smalllittle cubes and immediately add them toa saucepan starts cooking the apples ona medium to low heat add the sugar Iused here vanilla infused sugar you canuse vanilla extract if you prefer to andalso the cinnamon and stir everythingtogether seem well combined make surethe heat is not too high otherwise itcould burn from the bottom wheneverything is well combined allow it tocook for at least 10 to 15 minutes whilethe filling is cooking I’m gonna bepreparing the nuts like I said I’m usingwalnuts but you can use any kind of nutsthat you prefer you can use almondspecans whatever you preferand if you don’t like nuts you can justleave them out and I want my walnuts tobe coarsely chopped so I’m using a mixeryou can also do this using just a sharpknife and this is the texture I won’thave after about 12 minutes of cookingthe apple filling has nicely thickenedand it turned into a kind of jamtexture so this means it’s ready I’mgonna have to remove it from the stovetransfer the apple filling into a newbowl so that they cool faster then goahead and add the nuts if you are usingthem and mix well and the filling mustbe completely cold before we use it nowthat the dough has rested the filling iscold we are gonna start making thepockets so there are many ways to dothis there is no right or wrong way todo it I prefer to do it by taking alittle piece of dough roll it betweenthe palm of my hand then flatten it outon the working surface and go ahead andadd 1 TSP of the filling which should becold already and close it by stickingall the sides together and of coursethey don’t have to look perfect or to beperfect because while baking they willstill slightly rise and spread just as acookie and if you prefer so you can usea rolling pin it makes the job easierand for this dough you won’t be needingto add any flour while rolling and fillin the pockets because the doughcontains enough oil and it’s kind ofoily to the touch so it doesn’t stickand it’s very easy to work with[Music]then place the pious are the littlepockets on a baking sheet that you havealready aligned with some parchmentpaper the open must be preheated to 175degrees Celsius that’s 347 degrees inFahrenheit you’re gonna have to bakethem between 15 to 20 minutes thisdepends on how big you made the littlepockets and they are ready when theyturn nice golden brown and the kitchensmells really delicious I really lovehow these Apple pockets turn out theytaste amazing and I really like therustic look when you take them out ofthe oven wait until they slightly cooleddown and when they are still warm goahead and generously coat them withicing sugar don’t be afraid of addingtoo much icing sugar we really need itto both balance the flavor and for thetexture we didn’t add so much sugar tothe dough so it’s really important thatyou generously cover it with icing sugaryou can enjoy this delicious apple piepockets either warm or cold they stilltaste amazing and you’re gonna have towait until they are totally cold beforeyou can cover them or save them in afood container otherwise they will sweatthe sugar will melt and they
