How to make quick and easy cookies



RECIPE

Ingredients
250g unsalted butter, softened
250g light brown sugar
125g caster sugar
2 eggs
1/2 tsp vanilla extract
500g self raising flour
375g chocolate chips

Method
1. Preheat the oven to 160C/140C fan/gas 3/325F. Grease and base line 2-3 baking trays.
2. Cream the butter and 2 sugars together until pale and fluffy.
3. Beat in the eggs a little at a time until fully incorporated. Beat in the vanilla.
4. Stir in the flour and then the chocolate chips with a wooden spoon until they form a dough.
5. Wrap in clingfilm and refrigerate for 1-2 hours or freeze.
6. Roll the dough out to 5mm thick and cut circles from it around 7cm in diameter.
7. Spread the cookies out on a baking tray and put them in the oven for 13 minutes.
8. Leave to cool on a wire cooling rack.
9. Enjoy!!
