How To Make Oat and Raisin Cookies | Episode 59

My guide on how to make oat and raisin cookies.

This is a wonderful recipe and so easy to make. Who can resist a soft cookie with a gooey middle? Just delicious! I’ve made these with oats and raisins, but you could change that. In the past, I have tried cranberries and white chocolate for a real treat. You really can’t beat a homemade cookie.
This recipe makes about 28 cookies, if this is too many you can freeze them after they have been divided into balls. Just place a small piece of parchment between each cookie, wrap and keep in the freezer until needed. Cook at the same temperature, they will just take a little longer. Friends will be impressed when you give them freshly baked cookies and think you are a domestic goddess and who doesn’t like being treated like a goddess.

Ingredients:
– 225g Unsalted Butter
– 275g Light Soft Brown Sugar
– 175g Caster Sugar
– 2 Medium Eggs
– 375g Plain Flour
– Pinch of Salt
– 1tsp Bicarbonate of Soda
– 125g Oats
– 125g Raisins

Method:
1) Preheat the oven to 180C/Gas 4 and line 3 baking trays with baking parchment.
2) In a medium saucepan, melt the butter and once melted leave it to cool for 5 minutes.
3) In a mixing bowl combine both the sugars, then stir in the melted butter.
4) Add the oats and raisins to the mixing bowl and then add the beaten eggs one at a time. The mixture will look quite sloppy, but don’t worry it will stiffen up.
5) Now add the plain flour, bicarbonate of soda and a pinch of salt. Keep mixing until everything is coated.
6) Place in the fridge for one hour to chill.
7) Once chilled break the dough into walnut-size pieces and roll into balls. 8) Place on a baking tray well spaced apart as they will spread while baking. 9 Press down a little and place in a preheated oven for 10-12 minutes.
10) Once cooked cool on the tray to firm up for 3 minutes before transferring to a wire rack to cool completely. Just delicious.
