How to make Lemon Burst Cookies from scratch

Aptly named these cookies are bursting with fresh lemon flavor. Very easy to make and just perfect with a cup of tea in the afternoon. They practically sing Spring has arrived. Recipe in the description.
Lemon Burst Cookies

1 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon fresh lemon zest
½ cup butter, room temperature
1 cup granulated sugar
2 large eggs, room temperature
1 teaspoon lemon extract
¾ cup powdered sugar
Preheat oven to 350*. Line a large sheet pan or cookie sheet with parchment paper. Set aside.
In large bowl of stand mixer beat butter about 30 seconds. Add granulated sugar and beat at medium speed for 5 minutes, scraping down sides of bowl as needed. This should be light and fluffy after beating. Add eggs one at a time and beat after each addition until well incorporated.
In medium bowl whisk together flour, baking powder and lemon zest. With mixer set at lowest speed add flour mix to the butter combination. Stir in extract and mix just enough to combine everything. Using a cookie scoop form dough into balls and roll each in powdered sugar to coat. Place 2 inches apart on prepared cookie sheet. Bake for 12-14 minutes. Cookies should be slightly puffed and just golden brown on the bottom. Remove cookie sheet from the oven and allow cookies to cool for 2 minutes. Remove from pan to a wire rack and allow to cool completely.

Tip: Dough is very soft. Handle very gently.
