How To Make Jen’s Crunchy Marshmallow Cookies – Easy and Fun for Kids

Hey, I’m no chef, but thought you might enjoy one of the quick little snacks I sometimes crave late night. If you like roasted marshmallows, you’ll love Jen’s Crunchy Marshmallow Cookies. All you need is Kraft Marshmallows, parchment paper and a microwave oven. Both kids and adults get a kick out of watching these things puff up as you cook them. The length of time to cook them depends on your microwave and how many marshmallows you do at one time; I do one minute per 4 marshmallows. Do allow enough space between the marshmallows so they can swell up without becoming one giant blob. They are the crispiest when you cook them until they begin to burn slightly on the bottom. As an optional variation, you might try setting a Hershey’s Kiss in the center of each cookie before they cool completely. Although they are crispiest when eaten right away, I have eaten them an hour later with only the bottom becoming a little chewy. They taste very similar to roasted marshmallows, minus the camp fire flavor. I hope you enjoy making your own Crunchy Marshmallow Cookies.
