Cookies
125 Grams of butter
1/2 Cup of sugar
1/2 Cup of brown sugar
2 Egg yolks
1 Teaspoon of vanilla extract
1/2 Teaspoon of rum extract
2/3 Cup of eggnog
1/2-1 Teaspoon of ground nutmeg
1/2-1 Teaspoon of ground cinnamon
2 1/4 Cups of self raising flour
Frosting
2 Cups of icing sugar
60-70 Grams of room temp butter
1/2 Teaspoon of rum extract
3 Tablespoons of eggnog
Dust with ground nutmeg

[Music]get a mixing bowl with a stand mixer ora hand mixer if you don’t have onechucking about 125 grams of butter thenadd half the cup granulated sugar andhalf a cup of firmly packed brown sugarnow one beat this until it’s pale andfluffy now get 2 egg yolks add them[Music]now add one teaspoon of vanilla extractand half a teaspoon of rum extract thenadd 2/3 of a cup old eggnog now just mixthis now add about anywhere from half ateaspoon to a teaspoon or Brown an equalamount of grounded cinnamon so if you’reputting half a teaspoon and groundnutmeg put in half a teaspoon of groundcinnamonnow get about two and a quarter cups ofself-raising flour while this is on lowadd it slowlyso it’s all added no just get themixture now the size of anyway from oneto two tablespoons depends on how bigyou want the cookies to be just placethem about two inches apart what youwant to do is pre-heat your oven toabout 175 degrees Celsius which is about350 degrees Fahrenheit now these shouldtake about about 12 to 15 minutes nowyou want to put them on the lower shelfand don’t put them on the top now justleave them on here for about 10 to 15minutes just to cool and set a littlethen transfer them to a wire rack orsomething let them cool completely nowget a large mixing bowl put in two cupsof powdered sugar icing sugarconfectionery sugarsame thing different name then add about60 to 70 grams of room-temperaturebutter then add just a little bit maybeabout half a teaspoon of rum extractabout three tablespoons of eggnog youcan always add a little more once you’vemixed this if you think it needs to benot as thick so for this I’m just gonnause a hand mixer because I’ll get abetter consistency but you don’t have to[Music][Applause]get your cookies get the frosting put itover the top however much you want howthick you want it yeah you’re not toleave as is or you can sprinkle a littlebit of nutmeg over the top which is whatI like to do and just serve up now oryou can put this in the fridge to letthe frosting set for about 10 minuteseither way it’s going in your stomach soit doesn’t really matter[Music]
