Gnanakatha is one of another popular teatime delights in Sri Lanka since a long way back. It’s a #90’s kids favourite. What I really like about this simple but unique delight is its texture. It is like a hybrid of a butter cake and a butter cookie. Hope you enjoy. Please subscribe to my channel.
Ingredients:
250g Flour
125g Sugar
45g Butter
1 Egg
1tsp Vanilla
1tsp Baking Powder
For coating:
Sugar
Water
Mix the flour and baking powder. Cream the butter and sugar in a bowl and whisk in the egg and vanilla, whisk well until everything is combined. Add the flour and baking powder to the batter and knead well. Take out small portions and shape into balls. Then gently press the balls to slightly flatten them. Preheat the oven to 180°C. Apply some water and coat each gnanakatha with sugar. Place them in baking tray and bake for 12-15 minutes until they puff a little.
