How to make Gluten Free Monster Cookies (or non-GF)

Monster Cookies offer a great variety in flavor profiles from a single dough; just add your family favorites i.e., chocolate chips, M&M’s, raisins, craisins, dried cherries, nuts, etc. With a yield of about 5 dozen, they are a convenient way to freeze portioned dough for fresh baked cookies at a later date. These are great treats that include good protein sources, although like most cookies, the high sugar does call for moderation. My preferred gluten free flour is King Arthur Gluten Free Cup for Cup, because it doesn’t contain any bean flour and doesn’t leave a sandy texture in the mouth.
