How to Make Dessert with Leftover Egg Yolks | Sablé Cookies with Passion Fruit Filling

*makes 6 individual desserts (2.5 inches/6 cm diameter rings)

● Sablé Cookies

our large egg yolks (80g)
⅖ cup (80g) granulated sugar
pinch of salt
⅓ stick of softened butter (40g)
1 cup (114g) pastry flour
½ tbsp (7g) baking powder

● Passion Fruit Filling

⅓ cup (70g) passion fruit purée
2 ½ tbsp (22g) dextrose
3 tbsp (45g) lemon juice
1 tbsp (15g) granulated sugar
½ tsp (2.5g) NH pectin
¾ cup (121g) diced mango

● Vanilla Chantilly

1 cup (230g) cold heavy cream
⅖ cup (50g) powdered sugar
vanilla extract

● Steps:

1. In the bowl of a mixer, whisk on medium speed egg yolks and sugar, for about 5 minutes. Add the butter and mix with the paddle attachment. Add the sifted flour and baking powder. Using parchment paper or guitar sheet, roll the dough to 0.5 inch (1 cm) thickness. Freeze.

2. Preheat the oven to 325°F (170°C).

3. With a cookie cutter, cut 6 cm circles and freeze again.

4. Bake for 15 minutes.

5. For the Filling, heat the passion fruit purée, half the lemon juice and dextrose. When it reaches 77-86°F (25-30°C) whisk in the pectin and sugar. Boil one minute, add the remaining lemon juice and mango. Pipe into 3 cm half-spheres and freeze.

6. For the Chantilly, whisk all the ingredients on medium speed, until stiff peaks form. Transfer the whipped cream in a pastry bag fitted with a 1 inch (2cm) piping tip. Keep it in the fridge until ready to use.

7. On each cookies, place a semi-sphere of passion fruit filling. Pipe the Chantilly, trying to encase the filling, garnish with the nectarine slices and dust with powdered sugar.

● Tips:

1. The cookies should be a little bit smaller than the rings you’re using for baking.

2. Before the assembly, scrape the edges of the cookies until smooth.

3. Pipe some Chantilly on each cookies, before placing the passion fruit filling. This way, the filling won’t slide.
